Cleaning, Breaking Down & Identifying the parts

Be the master of your domain by learning how to gut, clean and break-down a whole fish. You will be working with our mongers to learn how to go from dock to plate utilizing the many cuts of the whole fish as well as proper knife work for filleting and skinning.

The art of the Blue Crab

Make this summer the Summer of Crabs! They're plentiful sweet gifts from nature to be enjoyed almost all year round. First you will learn how to choose the right crabs for you by identifying their genders, sizes and some tricks on picking the best ones from the bunch. Then we will be boiling them, cleaning them and learning how to cook a dish using them whole.

Taste the Rainbow

Take a deep dive into the many fish species in the Gulf and what makes them each uniquely special. We will be learning the language of the monger to understand flavor profiles and cooking techniques that best suit each fish. This includes a multi-course tasting of these fish varieties in different preparations that showcase their meat.
